Ingredients (Serves: 2)

  • Chicken breast260 g
  • Potatoes500 g
  • Bell pepper160 g
  • Onion100 g
  • Sweet paprika8 g
  • Olive oil16 g
  • Cooking cream60 g

Method

  1. Cut the potatoes into 2 cm chunks, the onion into thin slices and the pepper into strips. Put them in a deep microwave-safe dish with the olive oil, paprika, salt, pepper and 50 ml of water. Cover with a plate and microwave on full power for 6 minutes.

  2. Cut the chicken breast into 2 cm cubes so they cook evenly. Stir the vegetables, lay the chicken on top, cover again and microwave for 4 minutes.

  3. Stir well, bringing the chicken from the top to the bottom, and microwave for 2 more minutes. Cut the biggest piece in half: it must be white all the way through with no pink, and the juices must run clear (74 °C in the centre).

  4. Stir in the cream, microwave for 1 minute and let it stand covered for 1 minute before serving.
