Ingredients (Serves: 2)

  • Cod loin200 g
  • Salmon fillet120 g
  • Leek160 g
  • Carrots160 g
  • Celery80 g
  • Potatoes400 g
  • Fish stock500 g
  • Cooking cream120 g
  • Butter20 g
  • Wheat flour16 g
  • Fresh parsley6 g

Method

  1. Peel the potatoes and cut them in small cubes. Cut the leek, carrot and celery in small, even pieces.

  2. Melt the butter in a wide pot over medium heat, add the leek, carrot and celery and cook for 3 minutes. Sprinkle with the flour, stir for 1 minute, then pour in the fish stock a little at a time, stirring so it stays smooth.

  3. Add the potatoes, bring to a boil and simmer for 10 minutes, until the potatoes are nearly tender.

  4. Cut the cod and the salmon in chunks, slide them into the pot with the cream and simmer gently for 4 to 5 minutes, until the fish is just cooked. Season with salt and pepper and serve in deep plates with the chopped parsley.
